Olive Leaf Gin is made with a big base of juniper, overlaid with coriander seed, rosemary and bay leaf. Four Pillars Gin is one of the great modern Australian gins, with huge, fresh orange flavours and a sharp peppery pinch anchoring a steely juniper core in place. Having made so many citrus forward gins this is an olive branch as such to all those savoury gin lovers out there.

The double-distillation process takes place in copper stills; the gin is accordingly smooth while still boasting a breadth of unique botanicals, including juniper, coriander, and za’atar. La Mallorquina is distilled only once a year in small batches, which makes this gin exclusive and very special. What makes this gin incredibly special are the additional botanicals distilled individually in Locksley’s Rotovap Vacuum Still. In the commune of Avignon in the middle of the Rhône is the island of Barthelasse: the largest river island in Europe.

Botanicals like rosemary and bay leaf transport you to the Mediterranean, while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.
