This Chocolate Orange Fudge is such a fun and easy recipe to make as gifts or an afternoon activity with children. If you are using the microwave, DON’T cook for any longer than 30 – 45 seconds at a time or you’ll burn the chocolate. Can I add any other flavourings? I could give you a million suggestions for what to do with these lovely preserves, but to be honest, our favorite way to eat them is straight up. You can also make your own by blitzing 250g/ 9oz raw, unpeeled, unsalted almonds in a powerful blender (I use a Vitamix) until it becomes a fine powder. You normally can’t use a food processor or blender for cake recipes made with flour because they’re simply too powerful so they will overwork the gluten in the batter, resulting in horridly hard, rubbery cakes! First – boil and chop Sometimes cake mixes contain small lumps which are difficult to incorporate into the batter. If this is the case with the one you buy, simply pass it through a sieve before mixing with the other ingredients. Baking and making gifts is definitely one of them. There’s something really peaceful about producing something from your own kitchen to give away. Bonus if it only takes 3 minutes 😆 You will need 2 medium oranges about 8cm / 3″ in diameter (think baseball size) totalling around 600g/1.2 lb. You don’t need to be exact here – if they weigh more, your cake will be a little bit more moist. If they weigh less, that’s totally fine – almond meal cakes are super moist already, you won’t feel deprived. Unfortunately not! Tried, and it was too bitter because the ratio of pith to flesh is higher. But it had a gorgeous lemon flavour. Still working on it! Please allow 3 working days for us to process a return. We will organise a suitable date and time for our couriers to collect the item I can 100% promise you, this cake is moist and flavourful enough to eat plain. But if you really want something to dollop on the side, yogurt is excellent – the fresh tartness plays extremely well against the nuttiness of the almonds, and I think it’s a better option than cream. Plain or Greek yogurt is best, or a very mildly sweet flavoured one.

Spoon the batter into the prepared basin, ensuring the mixture doesn’t rise more than half of the way up the dish or it could rise and bubble over the sides. Cook, uncovered, on HIGH for 3 minutes 30 seconds in an 800W microwave oven or 2 minutes 50 seconds in a 1000W microwave oven. The sponge should be well risen, just firm to the touch and a little gooey around the edges. (Microwave ovens vary so the timings above are a guide. Be prepared to adjust if yours is more or less powerful than the ones in the timings above.) To make the sauce, put the chocolate in a microwaveable bowl and cook on HIGH for 1 minute. Stir and then cook on HIGH for a further 20–30 seconds, or until the chocolate is very soft but not completely melted. Don’t allow to overheat or it burn. Stir until smooth.
