Fish Maw Soup | Wok and Kin

I loved this savoury soup since I was a child. Now that I put some thought into it, I realise I don’t only love the unique taste of the sea product; it reminds me of my favourite festival. I also like the fact that it’s more humane and affordable than other delicacies such as shark’s fin soup. Now that I’m an adult and took over the role to prepare meals for Chinese New Year, I begin to appreciate this soup a lot more.

You can easily make your own ‘puffed’ Fish Maw by Deep-frying it from its natural state. Just drop pieces into moderately hot oil and you can see them puff up almost instantly in a dramatic fashion. If you do this, rather than buy them already prepared in this fashion, then it is a good idea to rinse off any residual oil under running water if you want to store them for any length of time. Accessed 27 Apr 2015 The plain, dried form of Fish Maw has an aroma of the plain dried sort a little like dried squid (albeit much milder), while the deep-fried type doesn’t really have much of a smell at all. That has continued to date so that the Nile perch prices have stabilised because of the fish maw,” said Guda.

Technol. 5, 289–301 (2008) The picture above shows what appear to be three very different things but, in fact, they are just different forms of a product used in Chinese and South-East Asian cookery, and commonly referred to as ‘Fish Maw’. It is an ingredient that is preserved by drying and is prized, particularly in Chinese cuisine for its texture rather than its taste. Being a dried ingredient, it requires soaking, and sometimes simmering before use, and you can read on to learn how to prepare and use this interesting foodstuff. What is Fish Maw? Dried Fish Maw in its natural state. Sonar operators, using the newly developed sonar technology during World War II, were puzzled by what appeared to be a false sea floor 300–500 metres deep at day, and less deep at night. This turned out to be due to millions of marine organisms, most particularly small mesopelagic fish, with swimbladders that reflected the sonar. These organisms migrate up into shallower water at dusk to feed on plankton. The layer is deeper when the moon is out, and can become shallower when clouds obscure the moon. [21]The combination of gases in the bladder varies. In shallow water fish, the ratios closely approximate that of the atmosphere, while deep sea fish tend to have higher percentages of oxygen. For instance, the eel Synaphobranchus has been observed to have 75.1% oxygen, 20.5% nitrogen, 3.1% carbon dioxide, and 0.4% argon in its swim bladder. Alternatively, people with a Qi Deficiency in the Spleen or stomach can also mix fish maw with herbs like Astragalus root, ginseng or Codonopsis root ( Dang Shen). Consuming a herbal formulation that includes these herbs can help nourish qi and invigorate the Spleen. Biotechnol. J. (2017). https://doi.org/10.1002/biot.201700239 Preparation Dried fish maw must first be rinsed and then soaked in a large bowl of water to soften the texture before use. There should be enough water to allow room for the fish maw to expand. The period of soaking typically ranges from 6 to 12 hours or until it becomes softened.
