Credit: AnnMarie Mattila/Mashable Short Sous Vide/Seal Test: To discover how each vacuum sealer does with sous vide and a large cut of meat over a relatively short amount of time, we placed an 11-ounce, bone-in pork chop in a bag and sealed it. We timed how long it took to seal and weighed it (in grams) before cooking. We then cooked the chops at 160°F for four hours (using an immersion circulator), dried the exterior of the bag, evaluated the seal, and weighed once more. The touch controls and operation of this machine are quite simple, though it takes a bit of force to get the lid to close and seal. It's a minor quibble, but we did find the buttons to be very sensitive: We accidentally turned it on before we meant to a few times when loading up the bag and food. Definitely follow the instructions and do not overfill the jar or bag no matter what process you’re using. One thing I do miss is the cutter on the old machine. With new machine, you have to cut bag with scissors and the cut has to be very straight or the bag will not evacuate. Though bulkier and less attractive than other models, this machine is about as close to commercial-grade as you can get for sealing large quantities of meat. But thanks to an intuitive control panel with one-touch operation, it's simple enough for novices to use. It offers basically all the bells and whistles one could want in a vacuum sealer, including onboard bag storage, a removable and dishwasher-safe drip tray, a built-in handheld sealer, dry and moist modes, and automatic detection that senses when the bag is in the right position and starts the process all by itself. VacMaster VP210 Chamber Vacuum Sealer is built for commercial use, so it's the largest, heaviest, and most robust to consider. The chamber height is an impressive 5 inches, meaning there’s more space for food. At a whopping 83 pounds, this is likely going to park itself somewhere, where it will stay. It’s definitely not easily portable. Delicate Food Test: To see how each vacuum sealer does with delicate foods, we placed 1/2 cup of Chex cereal in a bag and sealed the cereal on all available settings (automatic, manual, pulse, delicate, etc). This weighs a bit over 26 pounds, so it can be moved, but it’s not as easily portable as your favorite slow cooker. Seldom-used items made from gold, silver, cast iron, or other delicate metals are a good choice, too: Vacuum-sealing can keep jewelry, silverware, and similar heirlooms clean and free of tarnish and rust.
