Aged in two different barrels: The wine is aged in two different types of barrels - traditional wine barrels and then in rum barrels. The fruit is harvested at night when the ambient temperature is cooler, then immediately transported to the winery to be de-juiced ensuring minimal skin contact occurs. Our home was built to be environmentally sustainable, with an on-site wastewater treatment plant, solar hot water, the use of recycled and renewable materials and a design to minimize the use of power for heating, cooling and lighting. We also collect rainwater from the roof for our dual flush toilets and there's an on-site wastewater treatment plant to allow all water to be re-used for irrigation.
