A general rule of thumb is to purchase cold-pressed extra virgin olive oil from one supplier or country. Here I've used a mix of fresh and dried herbs, olives and of course a good amount of extra-virgin olive oil. Once the garlic cloves are roasted, you should be able to easily mash them with a fork and mix them in. But you can make an olive oil and balsamic vinegar bread dip with a splash of balsamic vinegar as well.
