When our winemaker Steve was offered this parcel he recognised that it was the best fruit he'd seen in years and produced a wine that sat above our all time favourite Aussie red - The Black Pig! A diverse array of wines are made by this producer including those from grapes viognier, merlot, sauvignon blanc, grenache (garnacha), white blend, pinot grigio, cabernet sauvignon, chardonnay, cabernet - syrah/shiraz, grenache - syrah, and grenache - mourvedre - syrah. We use specific Riedel glassware which we believe to be the best vessels to swirl, sniff and slurp from. Aged in oak barrels for 6 years under a voile ‘veil’ of yeast - similar to Sherry - exposed to oxygen, but unfortified.The winemaker is then given total freedom to source the grapes they want and to create the wine they want. Nothing is added or taken away with the exception of small amounts of sulphites for stability, often none at all. Using fruit sourced from his personal contacts in the McLaren Vale, winemaker Steve Grimley's team has produced a smooth, mouth-filling wine that's vegan-friendly.
